A promenade production, first performed in the Briggait Market, Glasgow, in association with the Citizens Theatre, before transferring to the Underbelly, Edinburgh (which the company had uncovered and named for their previous production, Gargantua).

Fermentation is the story of Odissa, a young French writer who falls pregnant to enigmatic fire-eater Serge.

A heatwave enshrouds the country and a refuse strike leaves the streets littered with rubbish. The heat, stench and a growing craving for cheese curiously lead Odissa into a sexual fantasy world both shocking and beautiful. A chance encounter begins her education in the world of cheese-making until, finally, she issues forth the fruit of her own labour.
